Tasty Tidbits: Brasserie Cognac

Whom You Know is pleased to continue our coverage of the Serafina Restaurant Group with Brasserie Cognac!

Restaurateurs Vittorio Assaf and Fabio Granato brought their love for French culture and French cuisine to New York City by giving the Big Apple an authentic slice of French dining when they opened Brasserie Cognac de Monsieur Ballon in April 2008.

Open for breakfast, lunch and dinner, Brasserie Cognac caters to every whim and has outdoor seating in addition to a lively bar scene. The bakery is open from 7:30am until 11pm and offers the freshest croissants and a wide range of other food options.

Chef: Executive Chef Florian V. Hugo created the menu and maintains the highest culinary standards.

Cuisne: The cuisine at Brasserie Cognac is generous in flavors, firmly anchored in the basics of French brasserie dishes, yet fashioned by Chef Florian V. Hugo with a modern and sophisticated twist.

Signature Dishes: Cod Fish with Champagne and Caviar Sabayon, Lobster and Foie Gras Tart and Tartar Royal of Corn-fed Filet Mignon with Caper Berries and Dijon Mustard. The extensive dessert list includes Lemon Meringue Tart and Ile Flottante. Chef Hugo uses Cognac inside a number of recipes, but in addition, Cognac is offered as a pairing to many dishes, including the tableside flambé.

Signature Drinks: 102 varieties of cognac are available along with an extensive wine list including first-growth Bordeaux sold by the glass. The Do Re Mi Cocktail is made with Rémy VSOP, Champagne, St. Germain, and a sugar coated apple slice.

Interior: The entire restaurant was carved and assembled in Paris and then shipped to New York City. The authentic French Brasserie décor transports you to the streets of Paris. The interior of Brasserie Cognac is designed with vaulted ceilings covered with tin, a spectacular zinc bar, an imposing baguette tower topped with round oversized clocks and a private Cognac dining room with hand painted Romantic murals.
Within the space of Brasserie Cognac there is also an adjacent bakery/rôtisserie with a separate entrance, showcasing freshly baked croissants and baguettes, as well as café au lait and free-range roasted chickens.

Ambience: Warm, spacious and inviting. Frequented by an eclectic but dynamic group of young business professionals, neighborhood locals, families and sophisticated culinary enthusiasts seeking authentic French Brasserie cuisine.
