Peachy's Pantry: Whom You Know Happily Kicks Off Our Coverage of Greylege Farm with their Outstanding Beef, Highly Recommended by Whom You Know

GREYLEDGE FARM, PASTURE RAISED FOR PERFECTION
Sustainable Connecticut Farm Leads the Field with Prime Stock, Exceptional Care,
Exemplary Stewardship of the Land, and Premium All Natural Black Angus Beef

If we had to write this review in one sentence, it would say "This Black Angus Beef is Absolutely Perfect." Making its debut in our Peachy's Pantry column is Greyledge Farm!  To be literal, this would be more along the lines of Peachy's refrigerator, then Peachy's Pan, then Peachy's stomach, and the process could not have been more pleasurable!  Whom You Know has learned of the outstanding quality of Greyledge Farm through our friend and upcoming Mover and Shaker Jennifer Creel (we have featured her sunglasses which we love; they are sold at Bergdorf Goodman and you should all pick up a pair.  They were our 2009 sunglasses of the summer and we don't see why this year should be any different!)

You will find Greyledge Farm in our most favorite state, the great state of Connecticut!  Straight from the town of Roxbury, Greyledge Farm's (www.greyledgefarm.com) all natural pasture raised Black Angus beef is available to the New York and Hamptons markets and it is making its first entry into Whom You Know.  We can tell you with confidence it will not be their last.

The quality is absolutely exquisite, not a word normally associated with hamburgers, and you will enjoy Black Angus beef that is restaurant quality at home.  When we say restaurant quality, we mean the TOP restaurants.  What began as a small operation providing family, friends and the neighboring community with a local product of the highest quality, is growing to a new level of success and if you just tasted the hamburger Peachy Deegan ate, you would know why.  It beats some of the best burger places in Manhattan (Peachy and one of her friends from Miss Porter's are on a mission to determine which is the best burger place in Manhattan, maybe we should stop and just stay home and eat Greyledge Farm!), and that is not because Peachy is a chef (she definitely is not.)  It is because we are using an OUTSTANDING product.  She just made it in her fabulous new Anolon pan, and it cooked to perfection.  When you have one great product in another great product, you come out with success!

In addition, Greyledge Farm’s commitment to the health and vitality of its cattle, exceptional farm practices, and responsible stewardship of the environment, have earned the farm a reputation for premier, delicious USDA-approved all natural Black Angus beef.  Increasing demand has propelled Greyledge Farm to expand, and their full-range of premium Black Angus beef products is now available through select artisanal retailers and gourmet green markets that compliment the farm’s commitment to sustainable agriculture and best farm practices.

Premium All Natural Black Angus Beef
Greyledge Farm’s unrivalled all natural Black Angus beef is healthy, tender, juicy and incredibly flavorful. Committed to producing the finest quality pasture raised products, Greyledge Farm’s Black Angus cattle are never fed animal by-products, growth-stimulating hormones, antibiotics or steroids.  Nutritious grasses, clovers, natural minerals and salts enrich the pastures and hayfields where the cattle roam, providing a uniquely bucolic and rich natural environment for grazing.  As a result, the herd is content, healthy, and high in Vitamin E, Omega-3’s, and Conjugated Linoleic Acid (CLA), which is found to help fight cancer and lower cholesterol.

To obtain Greyledge’s signature flavor, the herd’s grass diet is supplemented by a proprietary blend of locally grown natural grain. This ensures that the lean, healthy qualities of the premium-cuts are complimented by superior marbling and tenderness.  To achieve an unmatched buttery flavor and soft texture, the all natural Black Angus beef is dry-aged for twenty days.  Greyledge Farm’s Black Angus burger has earned a standing and loyal following as a featured menu item at the renowned Mayflower Inn & Spa restaurant (Relais & Châteaux) in Washington, Conn.

“Our Greyledge Black Angus burger is one of the most popular items on the Tap Room menu,” said Justin Ermini, Executive Chef at the Mayflower Inn & Spa.  “We receive many inquiries as to where we source our high quality and delicious beef, and we see customers returning time and time again for it,” he added.

Unique Herd and Stress-Free Environment
Greyledge Farm is unique among most purveyors of beef in that it provides exclusive and continuous care for the herd for the entirety of its life cycle.  The vast majority of the animals at Greyledge Farm are born on the property and the few that are acquired to compliment the herd are 100% source-verified. No animal in the herd is more than eight years old. In stark contrast to modern farm economics where the emphasis is on yield and profitability, Greyledge Farm’s focus is on its animals, the quality of the beef and its reputation. The cattle are raised the old-fashioned way – in a gentle country environment.  Through a combination of private farm land and partnerships with local land trusts, Greyledge Farm cattle have access to more than 1,000 acres of lush pasture and hayfields.  They are often found in their favorite spots at certain times of the day, such as wading in the streams and ponds on the Greyledge property in the morning and resting in the shaded meadows during the midday.

“At Greyledge, we are personally responsible for the quality of our beef and we spare no expense in the individualized care and humane treatment of our animals,” said Terry Fitzgerald of Greyledge Farm.

The Greyledge Farm Family
To maintain the highest standards at Greyledge Farm, the Fitzgeralds partnered with knowledgeable and accredited industry professionals, Mark and Tammie Maynard.  Mark is a fourth generation farmer and a graduate of the University of Connecticut’s School of Agriculture with a degree in agricultural sciences.  Mark has been recognized as the premiere Black Angus breeder and exhibitor at the New England region at the Eastern States Exposition.  As hands-on owners, the Fitzgerald and Maynard families are dedicated to quality and excellence in every aspect of Greyledge Farm.  Together, they have spent the past four years perfecting the product and building the herd so they can now offer it selectively to gourmet retailers in New York City and the Hamptons.
