Tasty Tidbits: Green Square Tavern

Their website tells us: 100 years ago, most food came from small, family-owned farms. Today, big corporate agriculture has driven family farmers to the edge of extinction. Factory farming has increased crop yields but lowered its nutritional value. Decreased food prices, but widened waistlines. And don’t get us started about the poor dairy cows.
It’s enough to drive you to drink (hence the Tavern part.)
Today, 12 year-olds have adult onset diabetes, and more than one third of U.S. adults are obese.
So what’s an independent restaurant to do? We choose to take a giant step back.
Greensquare Tavern is stepping back 100 years to when agriculture and nutrition built the USA into the most vital, vibrant, healthy population on the planet. Only by returning to agriculture that’s in harmony with nature, can we look forward to a healthy future sustained by delicious nutrition.
