We absolutely love seafood at Whom You Know and have been further inspired by our recent visit to The Grey Lady. I always have an appetite for seafood. One of my favorite treats from the sea is a fresh oyster. Now, thanks to Fresh Origins, I can have that great Oyster taste packed into a leaf! I know it is hard to believe, but these small green leaves taste like fresh oysters! The texture is obviously quite different, but these leaves have the same mineral and salty flavor as an oyster. What better way to enjoy these leaves than with another one of my favorite types of seafood - scallops. I pan seared some scallops with a white wine sauce and added in these oyster leaves. The result was delicious! I will definitely be making more of these very soon!

I have never eaten an oyster leaf before. Perhaps it's just the power of suggestion, but the first thing that hits me is that its name is most apt. There's a slight taste of fish. And grass. Lying in a field in summer. Pulling a grass blade up very slowly so it doesn't break. Success! I have the green blade and the white part beneath it too. Biting down on it I taste something like this Oyster Leaf. To me Oyster tastes a bit like raw peas as well. It's earthy, and nice. Oyster Leaf not only gave me a fresh taste, but brought back pleasant summer memories as well.
