We used two different Terra Medi Oils and three different Terra Medi vinegars to make salad dressings and compare.  The white wine vinegar had a light, almost fruity flavor.  Not something I have experienced before with a vinegar.  The light color fooled me into preparing for a boring, white vinegar taste.  But, I was pleasantly surprised by the depth of flavor in this little bottle.  It mixed well with the sesame oil, which added a delightful nutty aftertaste.  The olive oil and white wine vinegar dressing passed, but the flavor of the sesame oil really made the best combination.  This is a good vinegar for those who prefer a lighter taste and may be intimidated by the rich Balsamic.

The third vinegar from my new favorite oil and vinegar brand, Terra Medi, is their White Wine variety. Crisp and sharp, the vinegar lends itself for many recipes. When I first saw this bottle of vinegar, my reaction was "oh how pretty!". I have never used, tasted, or even seen white wine vinegar until now. As for taste, I found white wine vinegar to be very mild. It is vinegar toned down (although the smell is very strong). I really liked it. It is perfect if you want to keep things simple and clean. This vinegar will allow the flavor of the food to really be the center of the dish. I definitely recommend this vinegar to anyone who tends to stay away for vinegar because of its strong flavor.
