Champagne Wishes: Simonnet-Febvre Cremant de Bourgogne Brut Recommended by Whom You Know

This is called Champagne Wishes, after all, so you know when we review anything bubbly we are incredibly enthused, and we are pleased to kick off our coverage of both Simonnet-Febvre and Domaine Louis Latour!  The Peachy Deegan is of course always properly served in a Champagne Flute...but this time we used the flute for the amazingly sparkling Simonnet-Febvre Cremant de Bourgogne Brut!  Light and perfect for summer, its sparkle will envelop your senses and make every day a holiday. The maison & domaine of Simonnet-Febvre was founded in 1840 by Jean Febvre, a barrel maker by trade from the town of Montbard. In the early days, the house was known for its sparkling Chardonnays from Chablis, known today as Cremant de Bourgogne. The Chardonnay and Pinot Noir fruit is hand harvested from vines averaging 20 years in age. The grapes are whole cluster pressed and then left to macerate with the juice and skins in contact for ten hours. The juice is then fermented in stainless steel tanks. Select wines from several vintages are then blended and bottled with the liqueur de tirage, which allows the secondary fermentation to take place in the bottle, giving the wine its magnificent mousse and sparkle. After nine months of aging and fermenting, the bottles undergo remuage and disgorging, and a dosage is added to the finished cremant, leaving 8g/L of residual sugar in the wine, creating the Brut style.


In 2003, Simonnet-Febvre was purchased by Maison Louis Latour. Since its purchase, the Latours have completely reworked the vineyards using the same sustainable vineyard practices utilized in Latour’s 125 acre domaine in the Côte d’Or, and hired a new winemaker, Jean-Phillip Archambaud.

Tasting Notes: A wonderfully well-balanced wine, with fine bubbles, a persistent foam and a well-developed length on the palate. Fresh and powerful bouquet with beautiful ripe yellow fruit aromas. This Crémant combines the finesse of Chardonnay and the power of Pinot Noir.
