Fresh Origins June 2014: What's New on the Farm! Accentuate Your Plate with Petite Ocean Beet Green and Petite Sea Grass this Summer. The Fresh Origins Hit Parade Continues!

Petite Ocean Beet Green on Pickled Beet & Beef Tartare,
Umeboshi Plum.

Petite Ocean Beet Green
Petite Ocean Beet Green has an earthy, grassy spinach & beet flavor with a salty marine undertone and a distinct bitterness. The leaves are smooth and thick with great durability & shelf-life. These can be served fresh or cooked. The salty and bitter taste combines well with the sweetness of beets and offers a contrasting balance to other sweet vegetables such as carrots or brussels sprouts. It can be quick raised and served with shellfish like a dayboat scallop. Toss it into a pasta with white clam sauce. This originates from northern beach habitats and is the ancestor of today’s beets and sugar beets.
Petite Sea Grass
Thin, curly green leaves. Mild salty flavor, with a refreshing crunchy texture. Pairs perfectly with shellfish, sea bass, sushi, and ahi! Originally from the seacoast of Japan where it is served with seafood.
