Their newest creation we must share with you is their Blackback White, for the serious connoisseur. We surmise they must have a lot of Irish in their genes, as Peachy's first experience with grain alcohol was in Ireland when she was a college student visiting a place where they made it themselves as a hobby...that day Peachy learned what the word proof meant.

Silverback Distillery, new to the market and fresh from Virginia, has given us their favorite moonshine in a bottle: Blackback White Grain.

 We love this wildly versatile alcohol for macerating our fruits, distilling it with citrus, or leaving it to steep cranberries for next Christmas season. The chameleon-like qualities of this of this gorilla incarnation is laudable and it can transform into your newest, strongest cocktail on your bar menu.  Restaurants, do you hear us?  Everyone that calls themselves a mixologist: you really can't be without knowing Silverback.

 Used as a straight up table-thumping shot, this white Grain lightning will be happy as an apero, or post-dinner cocktail complete with floating coffee bean. A must in your favorite bar recipes or as a staple for anything from bananas foster to happy hour, Blackback White is the new perfect gift.

Knock my socks off! Blackback White Grain Spirit at first can be a little too much like a Tequila which is not my favorite of but it was smooth when I chilled the bottle in the freezer. Now I did try it with a fruit punch on ice shaken not stirred and it was pretty damn good…fit for Bond, James Bond.

Blackback White is a Virginia bourbon mash grain spirit (i.e. white dog, moonshine, white whiskey, alley bourbon) distilled and bottled in Afton, Virginia, USA. The whiskey is named for Blackback Gorillas, young apes who haven’t yet reached the age where their backs turn silver and become “silverbacks”. The Blackback line of whiskies will all be aged under 10 years to capture the spirit of the gorillas and their maturation. “Blackback White” in the title indicates that this is an “unaged” bourbon mash whiskey.

Blackback White is distilled on-site using a continuous column distillation process. Silverback Distillery utilizes a 27’ continuous column to create the initial, locally-sourced bourbon mash white dog. “Blackback White” is the clear spirit that fills the bourbon barrels currently aging in Silverback Distillery barrel houses. A grain spirit/white dog must be over 51% corn to be considered bourbon mash. Blackback White’s mash bill is 67% White corn, 22% soft, red winter wheat and 11% malted barley. Bolt Milling in Christiansburg, Virginia provides the food-grade white corn and soft, red winter wheat. Malted barley is sourced from Woods Mill farm in Nelson County, Virginia. “White Dog”, takes about 6 days to cook, ferment and distill. When distillation is complete, the high proof bourbon mash white dog either goes into bourbon barrels at 110-115 proof or is cut to 90-proof and bottled as Blackback White. 

Blackback White’s taste profile is unique for a grain spirit/white dog. The exceptionally high quality food-grade white corn used in the mash bill imparts an uncharacteristic “tequila” nose and an unexpected sweet finish. Many distillers use yellow feed corn, but Silverback only uses the highest quality locally sourced white corn, complemented by soft winter wheat and locally grown and malted barley. It is cooked, fermented and distilled on premises, proofed with the best water and filtered using one-micron particulate filters (after blending with reverse osmosis treated water). 

Blackback White started as a novelty. Silverback Distillery customers wanted to know what the “white dog” tasted like BEFORE it went into the barrels. At first, Silverback owners thought only a few hundred flasks would sell, due to the nature of clear corn grain spirit. Now, over 5,000 sold bottles later, Blackback White is a bona-fide local grain spirit superstar.

Silverback is owned by Christine and Denver Riggleman, and Denver’s nickname is “Silverback.” The Rigglemans have three daughters, and Denver claims they were the primary cause of his early gray hair. Once the name was decided upon, all of the spirit products produced by Silverback distillery will be named after simians or evoke the spirit of the Silverback name.
