Hill Country Barbecue Market is now selling its signature homemade If You Gotta Have It barbecue sauce and brand-new If You Can Stand It hot sauce in Harris Teeter stores throughout Washington, D.C. as well as North Carolina, South Carolina, Virginia, and Maryland. The If You Can Stand It hot sauce, named for its fiery flavor and spicy kick, will make its product debut, while the If You Gotta Have It barbecue sauce, previously only available online or in Hill Country’s New York City (30 W. 26th St.) and Washington, D.C. (410 7th St. NW) restaurant locations, will be available for the first time on store shelves. 



Known for its award-winning Texas-style barbecue, Hill Country Barbecue Market was named “Best Barbecue in New York” by New York Magazine and Time Out New York, as well as one of the “Top 10 Barbecue Restaurants in the Country” by The Wall Street Journal. 



Hill Country began bottling the homemade If You Gotta Have It barbecue sauce to serve alongside menu classics like beef brisket and ribs. Among barbecue purists, Texas is a dry-rub, no-sauce zone, thus Hill Country cheekily dubbed the barbecue sauce If You Gotta Have It in homage to that tradition. In 2008, the barbecue sauce won the Silver Medal Award of Excellence in the Barbecue Sauce: Fruit Mild category from the National Barbecue Association. 



The release of its brand-new If You Can Stand It hot sauce coincides with the partnership with Harris Teeter stores, offering customers exclusive access to this original product. “We are very excited to be launching into the retail business with our proprietary sauces and look forward to seeing bottles of If You Gotta Have It and If You Can Stand It on Harris Teeter store shelves,” says Marc Glosserman, founder and CEO of Hill Country Hospitality. Hill Country’s sauces are all made and bottled in America by Ashman Manufacturing Company, a gourmet manufacturer and distributor producing over 200 specialty food items throughout the United States. 



Both the If You Gotta Have It barbecue sauce and the If You Can Stand It hot sauce have unique, lip-smacking flavor profiles and each complements Hill Country’s signature meats in its own way. Executive Chef Elizabeth Karmel notes the challenge of creating a barbecue sauce for Hill Country considering Texas is traditionally a no-sauce zone. Karmel says, “We wanted to create a sauce that would appeal to all barbecue lovers with a vinegar tang in a nod to North Carolina’s barbecue traditions, enough rich sweetness to appease Kansas City loyalists, and a touch of smoky chipotle and sweet chunks of peaches for Texas.” 



The If You Gotta Have It barbecue sauce has a subtle, smoky heat with a note of fruitiness, while the If You Can Stand It hot sauce knocks your taste buds with its fiery tanginess. “Our hot sauce is for those who want that extra kick of heat with some smoky sweetness from the chipotles and peach nectar,” explains Karmel, adding, “the hot sauce boasts similar flavors to our barbecue sauce, making it the perfect accompaniment.”
