Peachy's Pantry: Honduras Finca Santa Marta Pacamara by Jim's Organic Coffee Recommended by Whom You Know

Right now they have two new limited editions from Honduras and we hope we are the first to tell you about it!  The Pacamara is a light blend that if you prefer light roasts you will enjoy terrifically.  We prefer to have a darker roast in the morning but find this ideal for the afternoon or an after-dinner coffee.  
The Pacamara bean is a hybrid developed in the late 1950’s between the famous Maragogype beans (known for their size) and the Pacas, named after its discoverer Don Alberto Pacas. Pacas is known for its high yield intensity. The size of these Pacamara beans are huge to say the least. The Pacamara beans come from a special place within Santa Marta known as "El Manguito" ("The Small Mango Tree"). It lies at the highest elevations (4,850 feet) and represents a unique microclimate within the property. This area of just 57 acres (23 hectares) is dedicated to the special Pacamara coffees. The cup is remarkable. In a word? Splendid. Cupping notes are very complex with bright flavors of citrus moving back and forth between grapefruit and orange; berry, El Maguito, and an underlying cocoa taste that balances perfectly with the citrus. This is a strong coffee with a pleasant and long aftertaste. We roast it to a city roast; being careful to retain and highlight the acidity and grand complexity of the coffee.

That handsome fellow on your screen is Jim Cannell. Jim is the owner/operator/founder of James C. Cannell Coffees, the company which roasts markets and distributes Jim's Organic Coffee™.

In 1985, Jim Cannell happened upon the coffee industry by chance when, while seeking work in Manhattan's Wall Street district, he was gruffly told by his future boss "OK kid, here's a desk, pick up the phone." Thus an odyssey in the green (unroasted) coffee business began.

In 1992, with a knowledge of coffee and a desire to roast organic, Jim started his own roasting company. Just two years of growth and success attracted the attention of a larger company who made a merger offer which made a great deal of sense. After working for the larger company for a short time, Jim felt his coffee and customers were better served in a way where he could keep a sharper eye on quality, and Jim's Organic Coffee™ was born.

Jim’s passion for organic coffee comes from the real sense that we are all part of one ecosystem; and that the decisions we all make have effects on other places and people. Jim is not preachy about organic coffee, it is just what he wants to be part of in the coffee business; and fortunately he is not alone.
