We like Via Emilia so much, we even take pictures of their bread basket (we can smell that terrific rosemary!).  A wonderful bread basket is the harbinger of more excellence to come, and Chef and Owner of Via Emilia William Mattielo has mastered amazing Italian food.

This is their 4th feature, and we continue to be impressed.
William suggested we try an appetizer we hadn't had before at any Italian spot: Borlengo.  
This is thin broad pan bread with pancetta spread, fresh rosemary and Parmigiano Reggiano.  Its simplicity was lovely and for us to find something new on an Italian menu at this stage is a feat in itself.
Though we have always called him William, we found out this trip that his real name is Guglielmo, and that's why there's a salad on the menu titled: Insalata di Guglielmo.  Mixed greens, shaved parmigiano, extra virgin and 5 year old balsamic team up for an amazingly fragrant and rich tasting salad.  If only all vegetables were this fantastic!  Also note that William has made it into the elite category where we trust his salad dressing.  99.999% of the time we emphasize we would like it on the side.
If you have yet to befriend the Lasagne (Modena Style of course), what are you waiting for?  It is one of the highlights of the menu with beef and pork for all the carnivorous people out there like Peachy!  
It is one of the best comfort foods we've had this winter.  It puts ordinary lasagna to shame and the flavor, taste and texture are superlative.
Also pictured at the top is our entree: Vitello alla Modenese.  Breaded veal with Prosciutto and Parmigiano served with roasted potatoes will totally hit the spot!  Every bite is just pure deliciousness and the entree is one you should try.  
We continue to believe that Via Emilia has some of the most extraordinary cuisine you have yet to try!  Bravo Guglielmo, and Bravo William too.  And P.S. Now they have opera night once a month...
