Opened in 2012, Doma pays tribute to the Czech, German and Eastern European heritage of its owners, wife and husband team Evelyn and Michael Polesny.  The cuisine recaptures the culinary memories of their youth for your enjoyment!  We were pleased to meet Evelyn on our inaugural visit to Doma, and its comfort food is ideal in this winter weather.  It's clear a lot of family pride goes into this business.  Doma has a devoted neighbrohood draw and is community-oriented; we adored its old, historical look.  They change 10% of their menu seasonally-four times a year-and achieve a lovely balance between greens and rich sausages.  We began with Cured Meats and Cheeses and you can pick from the list.  We chose House Cured Salmon (made there), Aged Gouda, Emmenthaler, Speck, and had our first experience with Lingonberry Compote which we really liked.  It is somewhat similar to cranberry if you have not had it either.
There are three salads to choose from at Doma, and we chose the Doma Salad: Greens, Avocado and Egg.  They were happy to put the dressing on the side per our request.  Everything was fresh and exactly as you'd want it to be.


We just loved the Smoked Brisket, which is grass fed and from Ottomanelli's.  It's smoked for 6-8 hours and the goodness is evident in every succulent bite.  We'd also order the German Potato Salad again, and the German Cucumber Salad is a nice touch for warmer weather but popular year-round.  The authenticity of this cuisine is innate for Evelyn and her family and you'll really appreciate this if you have a similar background, and will enjoy exploring it if it is new to you, or if you are rediscovering the cuisine of another generation of your family.  Evelyn also recommended the Beef Goulash, which is slow-cooked for three hours.  It is shown here with Pan-Browned Spaetzle, another traditional dish.
The Apple Strudel is the perfect finale, and we can't wait to see what Evelyn & Company do next!
