They might put the Dolce before the Gelato in their name, but here at Whom You Know, not much is more important than ice cream and gelato.  There are a lot of venues that serve these in Manhattan, but few are featured because they don't demonstrate the level of excellence that Emanuele Nigro does with the ultimate in freshness right down the the pistachio gelato that he made in front of us and we tried!

It was fabulously exciting to see all of their kitchen space during this third visit and we are glad and not surprised to tell you it is spotless and filled with quality, fresh ingredients.
This is the One More Hospitality Group hat trick.
They previously were lauded for inaugural reviews of Osteria 57 and Alice.
So far, so excellent and they MAY have even MORE tricks up their sleeve...
Pamina is a cute spot just around the corner from where we just visited them at Alice, and it opened on August 10, 2023 which is the night of the shooting stars in Italy.  Pamina, as you learned from the video, is the daughter of the Queen of the Night in the Magic Flute.  Emanuele tells us it's the story of free will and being unconventional, following an instinct.  That should sound familiar to you if you have read the previous 30,000 articles!  Philosophically we are aligned with Emanuele and team.
The gelato itself is phenomenal and the best we have had anywhere this season.  In addition to the spectacular pistachio, we tried the vanilla custard cream which sets itself apart from mundane vanillas elsewhere by adding one drop of Jasmine per 100 servings of gelato. You can taste this slight accentuation which distinguishes without overwhelming the gelato.  Of course if you have read us before aside from apple pie a la mode, the correct answer to dessert absolutely must be chocolate for Peachy and Emanuele is reading: the chocolate gelato was the best and if she never had to fit in her clothes again the only thing Peachy would be doing in this record breaking heat is eating the Chocolate Gelato from Pamina ALL DAY without her computer or camera or pen or keyboard.  This is what you should be doing now: eating this gelato.
We had a tiny taste of the sorbets however not enough to really comment on them, so stay tuned.
If for some insane reason you don't like Gelato, or if you are reading this in January, note the Panna Cotta comes with strawberries, and it's separated by a plastic layer!  This is a small example of a big detail that these guys get right.  Obviously this makes it freshest when you personally choose to combine them.  They are detail people too and we love it.  If we are going to eat a muffin it's got to be chocolate and this one is 70 percent dark Valrhona and the chocolate grade which tells you the quality of chocolate is Guanaja.  

Pamina impressed us on our first visit and you should be sprinting there in this heat!!!
We can't wait to see what they do next.
