It's not who you know, it's WHOM YOU KNOW and we love to know Charlie Marshall with two L's that owns The Marshal with one L.  The Marshal, under his stellar guidance, puts the heaven in hell's kitchen and next to Joey Mullen of course (one of best USA hockey players in history) Charlie is our favorite in this neighborhood.  As you see at the conclusion of this review his future is so bright we needed to wear sunglasses; his family, in the farm business, must be super proud of him, especially his fantastic MOM.  
We began this time with the crunchy Three Kale Salad, a bevy of nutritional goodness.  Blackhorse Farm Curly Kale, Green Tuscan Kale and Redbor Kale were like the three musketeers and we actually love love loved the garlic aioli dressing.  When was the last time you heard love and salad dressing in the same sentence here?  We can't remember either.
A must-try appetizer is definitely the Maine Lobster Butternut Squash Bisque.  Slow simmered Maine lobster revels in butternut squash with Ronnybrook farms cream.  The blissful concoction is especially enjoyable on a May Day like today that feels like February.  Bundle up and sip this winner!

Please meet the lovely Bourbon Planked Montauk Monkfish, super fresh and flavorful.  It just swam in from Long Island and Charlie uses Down East Seafood as a source.  We fell in love with the lemon verbena puree, sauteed baby arugula and of course the fish itself.  Just as superb as the salad dressing was the garlic, dill, tomato and caper remoulade which was simply sublime.
The farm sides continue to be spectacular from the Sauteed Spinach with garlic and butter to the Purple and White Fingerling potatoes.
The Creme Fraiche was to-die-for on top of the berkshire-bacon enhanced potatoes which were roasted to perfection.
Also highly laudable under Farm Sides are the Veal Meatballs which dance in a terrifically flavored tomato sauce and farm-e-san.  We love menus with personality and humor because it most often clues us into a smart person behind the brand that is also fun.
Carnivores everywhere, rejoice!
Wood Oven Braised Sirloin Tips by The Marshal will wow you.
Braised in finger lakes red wine, syrup and local rhubarb polenta, these juicy wonders of sirloin will succulently melt in your mouth, rendering you speechless.
We love that their spoons are not only made in the USA but also made in New York!
We could not remember the last time we had a great rootbeer float and they get big points for having this on the dessert menu.  Even better, it has Coney Island Brewery hard root beer that has a party in blue marble vanilla ice cream!
The final touch of a bourbon soaked cherry is exactly what makes life worth living!
Life is a bowl of cherries when you know Charlie.
