Whom You Know is thrilled to continue our coverage of the hottest salads this season exclusively from Peachy's Picks, and today please meet the salads of The Consulate Midtown.
Four salads grace the regular menu and in all four cases we added each of the four protein choices separately: Shrimp, Tuna, Chicken and Salmon.  Note both the tuna and the salmon you can choose the cooking temperature-we chose medium for both- and they stylishly arrive in cast iron on the side.
Let us commence with the majestic Brussels and Kale!  We have always gravitated to its excellence with pecorino and green apples in addition to obviously brussels and kale, and it is even better with Shrimp!  Owner Kiril tells us ALL THE SHRIMP AT THE CONSULATE ARE JUMBO SHRIMP!  Let's get this party started, indeed.  Not even the shrimp are shrimpy here, and they put the salad dressing on the side as requested.  The Consulate at both venues is excellent at attention to detail and they are among the most lauded newcomers to our site since covid.
Leave it to The Consulate to have us work with a Waiter named Cesar for the salad review!
Both Cesar Juca and Gerardo Barona were gracious and attentive servers this visit.
Next, a total classic, which we added chicken to: Cesar!
This was the only salad we wanted dressed.
Romaine lettuce, white anchovies, pecorino, bottarga and croutons amped up the luxury factor and announced this is no ordinary salad.  In every case during this review, the elements of each and every salad were of the utmost freshness and yielded a satisfying crunch of nutrition and deliciousness.  
In this salad column, we are showing you how you can go out and eat in a delicious manner while being healthy too.

We were pleasantly surprised to befriend a new salad: Heirloom Tomato and Watermelon!
It was on the specials menu, and it also features gorgonzola cheese. Festive and smashing, it is a harbinger of summer weather on your plate.
The Burrata Salad is tough to beat, and you all know we are so devoted to Burrata it has its own column.  The Burrata Salad at The Consulate is defined by cherry tomatoes, pesto, olives, frisee, onions, sumac and has some foccacia sing backup on the side.  In this case, Peachy chose the Salmon to be the highlighted protein and as you can see, pictures speak louder than words.  This kind of salmon quality is superior to most proteins at lesser venues with lesser salads that we don't waste your time with.  Salads at The Consulate are stars that should be getting a casting call from your diet.  Red wine vinegar dressing is on the side.
Finally, pinkies out readers, the Endive salad is the final exquisite jewel in The Consulate salad collection.  Tuna was our opted for protein here, and of course the base is endive.  Creative orange dressing sets off the oranges which have zero white veins in them, expertly presented, and brilliant candied walnuts and sprinkles of gorgonzola seal the deal.

The Media Torch relay from the Paris Olympics Tells Whom You Know:

In 1992, the Olympic Torch first came to Corsica to celebrate the Winter Olympic Games in Albertville. Thirty-two years later, it returned this Tuesday to put the spotlight on the island’s natural beauty. The Olympic Torch also highlighted the Corsican’s passion for sport and in particular football, through the collective relay organised by the French Football Federation in Bastia. In total, almost 120 torchbearers took part in the relay, including judoka Priscilla Gneto who lit the cauldron in the evening.

For the start of its journey, the Olympic Torch is certainly cultivating a strong link with the Mediterranean Sea. After having crossed it from Greece on board the Belem, followed the coast through Marseille, the Var, Alpes-Maritimes, and Bouches-du-Rhône departments, and then in Sète and Montpellier, on Tuesday it found itself on the shores of the Isle of Beauty.

The iconic natural sites of Corsica in the spotlight

Today offered a perfect occasion to capture some breathtaking images. As the relay and the day progressed, the route provided opportunities to highlight the iconic landscapes of Upper Corsica and Southern Corsica. The first site visited at the start of the morning was the Pointe de la Parata cape, an exceptional natural site overlooking the sea. The Olympic Torch also headed to Bavella, journeyed along a part of the legendary GR20 path before discovering some of the island’s finest beaches at Ile-Rousse.

It took in the streets of Corte and some of the most beautiful villages on the island, including Campana and Piedicroce, as well as the seaside resort of Porto-Vecchio, renowned for its crystal-clear waters. To help ensure that as many people as possible were able to get close to the Olympic Torch, three convoys were organised across the island.

Pride of place for Corsica’s passion for football

A moment of emotion and remembrance marked the passing of the Olympic Torch at Stade Armand-Cesari stadium, the home of Sporting Club de Bastia. It was in this stadium that 19 people died on 5th May 1992, while 2,300 others were injured when the south stand collapsed, a tragedy that marked the club's history. The Olympic Torch Relay wished to pay tribute to the victims. As a result, Josepha Guidicelli, the chairwoman of the collective for victims of the Furiani disaster, was the first to carry the Olympic Torch into the stadium, before a moment of silence in front of the memorial to the victims.

This sequence was followed by a collective relay organised by the French Football Federation. It was made up of 24 football enthusiasts led by Charles Orlanducci, the emblematic former captain of Sporting Club de Bastia and a former French international.

All aspects of the sport were represented by male and female football players who paraded in front of several hundred children gathered inside the stadium.

The group of almost 120 individual torchbearers was also made up of many people involved daily in developing sport on the island, including artistic swimming coach Lena Bardiot-Patroni, whose grandmother took part in the Grenoble Olympic Games (in 1968) and whose mother lit the cauldron in Corte during the Olympic Torch Relay organised for the Albertville Winter Olympic Games (in 1992). There was also Nicolas Filippi, who at the age of 81 is committed to encouraging people to take up athletics, Olivier Oggiano, who contributes to sport for all, and triathlete Nicolas Wallon. Like the latter, another nature lover, Joseph Acquaviva, a proud shepherd, was one of the relay runners.

Also featured among the torchbearers was the notable presence of Patrick Fiori,a native of the island who sang Mama Corsica at the Eurovision Song Contest in 1993. Mathieu Lehanneur, the designer of the Olympic Torch and Cauldrons for the Paris 2024 Olympic Games, also took part in the Corsican stage. It was an honour for the man who imagined the design of the Olympic Torch to take part in the convoy transporting the sacred fire of Olympia.

In Bastia, the Olympic Torch paid tribute to Philousports, a well-known figure in the sporting world for his comments on the social networks. This sport-loving native of Corsica died in 2021 due to a myopathy. Carrying the Olympic Torch was one of his dreams, even going as far as having the Paralympic Games’ agitos tattooed on his forearm. It was his niece and his close friends who carried the Olympic Torch in his name.

At the same time, a number of events were organised throughout the day. Olympiad style sports events were organised throughout the morning in Porto-Vecchio, a pétanque pitch was set up and BMX as well as table tennis workshops were held in Bastia. This is also where the celebration site was set up, in the heart of the city at Place Saint-Nicolas. Workshops dedicated to rollerblading, break dancing and combat sports were on offer and open to all.

On completion of the festivities and the show that was put on, it was time for the last torchbearer to finish the relay, namely judoka Priscilla Gneto. She grew up in Porto-Vecchio and has been competing at the highest level for more than ten years, as demonstrated by her bronze medal obtained at the London Olympic Games in 2012. By lighting the cauldron, Priscilla brought this day in the heart of Corsica to a fitting conclusion.

Tomorrow, the Olympic Torch will return to mainland France to travel through the Pyrénées-Orientales. From the Pic de Canigo mountain to the coast at Collioure, from Prades to Perpignan, it will continue its journey to the delight of the many curious onlookers watching the convoy pass by.

This post is dedicated to Peachy's late grandfather, a World War Two Marine purple heart veteran, and his brother who was killed in the Pacific in the Battle of Iwo Jima.  We know you are reading up there Grampy!

We had greater anticipation for American Sniper than any other movie in recent memory, and not only did it live up to our expectations: it exceeded them.  It is a must-see for all Americans and everyone that is a friend of America.   American Sniper is one story that represents many sacrifices veterans and soldiers throughout the ages have lived, and it's necessary for you as a recipient of American freedom to know what the cost of it is.

The brilliance of Clint Eastwood's masterful direction shines golden over every shot and poignant moment of this epic tribute that you all can own starting tomorrow!  We expect sales to go through the roof and thank you to Warner Brothers for including us: we are honored to review this great work.

The movie opens overseas and shows and doesn't tell the patient, strategic mindset of the phenomenal sniper, Chris Kyle, the protagonist and legend of this movie.   The cinematography and script could not be more stellar and one of many examples of how they bring the audience in is showing how the soldiers taste the dirt in the air and what it feels like to literally pull the trigger.  Pulling the trigger is more than one action: this film shows every aspect of that, the most powerful of which is the emotional struggle, which is also a moral one as you'll see.

We commend the decision to flashback to scenes of the childhood of Chris Kyle, as it is formative in knowing how he became who he was.  Kyle was a gifted hunter from the start, and the magic started to happen when he enlists in seals training. Chris Kyle is the human embodiment of the idea of a protector, and his loyalty and allegiance to his country should be praised constantly.  Later, we see Chris Kyle hit targets over a mile away with his signature deadly accuracy.

It's not all battle scenes: the best parts are the ones where Chris Kyle's personality and humanity have the spotlight.  We love the scene where he meets his wife at a bar, and she is just as likeable as he is.  He's not always a tough guy and watching her emotionally penetrate his tough exterior is a terrific character study: he wins a big stuffed bear at an amusement park for her.  Of course he was target shooting.  Bradley Cooper and Sienna Miller in tandem could not have executed their roles any better as they gave life to the epic story.  

Anyone that was in New York during 9/11 will have another moment that hits hard when the 9/11 scene comes up on television, which further fuels Kyle's protective nature.  His four tours of duty are testament to his supreme patriotism, including one right after his wedding day.  

As the characters overseas hit the screen, you wonder which ones are on our side and which ones you can trust.  It's artfully played out and the sequence is pure brilliance.  The speed at which the movie evolves is total alacrity.  The scenes back home in Texas are a sharp contrast, and reality is captured.  Taya emphasizes that "it's about us" and we surmise many military wives feel her at every moment.  When he returns stateside, Chris Kyle's reactions to ordinary sounds like in a car garage or a lawnmower trigger a different reaction, and his ability to relate is a challenge as it is for many returning soldiers.

One of the most powerful scenes in American Sniper is in the plane returning home with flags in the caskets, and the following military funeral.  The triumph of good against evil is a battle that everyone fights today (thank you also to the NYPD and NYFD) is an overriding theme in this epic drama.  
 American Sniper is not a war movie.  It's a humanity movie.  It is about gratitude, fortitude and powerful courage.  Chris, we hope you are enjoying it up there!

We're talking to you, readers, whom we consider friends from a distance.
And the avid readers know that French is the second language of Whom You Know, evidenced by recent annual press releases of past years.  Recently, we worked with both the French Consulate and the Academie Culinaire de France, not to mention big hits recently by stellar Peachy's Pick Le Rivage and the MADE IN FRANCE BRAND SINCE 1948, DegrenneWe're also giving you play-by-play as we hear it on the Olympic Torch.

Soooo, or alors, La Grand Boucherie is right up our alley and even if you haven't eaten there before, you will be struck by its absolute gorgeous setting and that alone will make you want to dine there in obvious style.  We first visited in the winter of 2023, and this is our second time there and it was even better.  If you are reading closely, you know that there is a big difference between being featured once and being featured twice, and frequency of features indicates how much we love you.  Actions speak louder than words.  But we will elucidate exactly why they are not just a pretty face.
A lot of people are into yoga for mediation.  The scale of deliciousness of the escargot at La Grand Boucherie put Peachy in a trance and delicately dining upon them is a great way to mediate in the world according to Peachy Deegan.  You will escape any New York troubles you may have and be transported away to the snails, shallots, lemon, parsley and garlic butter.  The escargots are imported from France we understand.  The plate is hot so don't go so crazy that you burn yourself.  There are two snails in each circle so you have a total of a dozen.  Peachy preferred the Chateauneuf du Pape Blanc to team up with this culinary feat.
Obviously, they give you the right fork.  
Bravo to their salad selections.
Everyone remembers Mover and Shaker Mireille Guiliano and French Women Don't Get Fat, need we say more.  You don't need to tell French people to eat their vegetables and we know this firsthand from our friends in Paris.  Above, meet La Salade Nicoise: Bibb lettuce, tomato, hard boiled eggs, AMAZING SAFFRON POTATOES (remember Peachy is Irish therefore somewhat an authority on potatoes especially having resided in Cork, Ireland), peppers, haricots verts, breakfast radish, confit tuna, anchovy and olives.  Of course they listened and put the dressing on the side for Ms. Uberpicky.  Another note, they understand her level of pickiness here!
Eat the rainbow, indeed.  It's both delicious and an artful presentation.
Avid readers know that green beans are Peachy's favorite vegetable, so Salade de Haricots Verts et De Moules was a dream come true.  Or a REVE.  That's dream in French.  Super unique, it's perfect for spring: mussels, green beans, shallots and dijonnaise mustard vinaigrette, which was a well-balanced and flavorful dressing that did not overwhelm the salad (take note, a lot of other restaurants.)
Additionally, there are NO SHELLS which we appreciate!
Dinner is not supposed to be a lot of work.
Carnivores, rejoice.
Happiness is eating any of the seven Pieces du Boucher at La Grand Boucherie.
That means meat.
Boucherie means Butcher.
The flavor and perfection of grilling means they are super serious about your dinner and you are going to love it.  This is the Entrecote Grillee.  We aspire to try the other 4 (not the lamb-Peachy doesn't like lamb) another day...we believe we had Steak Frites last time.
Entrecote Grille is a 12 oz Australian grass-fed ribeye and was medium rare as we asked, evidenced below.   We love the custom knife.  Happiness is steak at La Grand Boucherie with Bordeaux Rouge shown below, and you should absolutely make a reservation because even though they seat 600, General Manager Alex Gerea, who is a pleasure to work with again, told us they had 67,000 reservations in December of 2023 for close to 70,000 spots and in all of 2023 they had 380,000 reservations.  
Alex runs a tight ship we can see along with three assistant managers and four captains; it's very well-supervised and professional, and beyond that, approachable and friendly.  Diego Luna was a lovely server to work with this visit.
Can you remember the last time we said something like that about a restaurant this size?
Their tremendous popularity now extends to locations in Washington DC, Chicago and Miami with more on the horizon.
Of course Mademoiselle Peachy opted for the bearnaise sauce to go with it and the roasted mini pepper and salad were ideal steak companions.

The truth is, everything here looks as great as you see and the flavor is in the upper echelons of taste.
The biggest surprise of the night was the brilliantly creative Loup de Mer.  Of course you would expect the steak to rule here, but this Branzino is among the best we've had in recent memory.  It's a dish with layers of flavor hits and a gorgeous presentation: eggplant caviar, confit tomatoes, and aged Parmesan shavings are in perfect proportion to make this a winner.  In fact, Loup de Mer was our favorite dish this visit.  Also, there are chives on top which we also adore and it was the right touch.
Finally, they suggested a festive Ananas Roti Au Miel to finish: Honey roasted pineapple, vanilla Malagasy creme, ginger confit, lime tuiles, pineapple gel and lime sorbet.

We continue to be impressed at a high level and we look forward to seeing what they do next.
