#ParisPeachy #CulinaryCourant SIAL Paris 2026: the Event That Sheds Light on and Accelerates the Global Agri-food Industry

With just a few months to go until SIAL Paris 2026 (17–21 October, Paris Nord Villepinte), the trade fair has unveiled the findings of its new SIAL Insights 2026 report, an international analysis identifying ten major trends set to bring about lasting change to food markets and consumer behavior.

Compiled using exclusive data from Kantar Food 360™, Circana and ProtéinesXTC, the report highlights a more personalised, functional and experiential approach to food, whilst revealing the new trade-offs consumers are making in the face of economic, health and environmental challenges.

The 10 key insights into food in 2026

1. Healthy eating: fuel for a high-performing body
Consumers are seeking measurable benefits: protein, fiber, energy, immunity or digestive health.

2. The ‘gut brain’: food for mental wellbeing
Sleep, stress management, hormonal balance and cognitive performance now influence dietary choices.

3. Pleasure as a conscious experience
Premium taste experiences, bold flavors and culinary discovery are gaining ground.

4. Global commitment is becoming personalised
Reducing carbon footprints, short supply chains and accessibility are gradually replacing generic talk of ‘natural’ products.

5. Plant-based diets are entering a new phase
Beyond meat substitutes, consumers are diversifying their diets with more pulses and plant-based foods.

6. Individualisation is becoming the new norm
Age, lifestyle, nutritional goals and individual preferences are increasingly driving innovation.

7. The end of fixed mealtimes?
Functional snacks and small meals are becoming more common alongside traditional meals.

8. Accessible added value
Consumers continue to prioritize quality and health, but at affordable prices.

9. Digital technology is redefining food choices
Social media, influencers and online recommendations are playing an increasingly important role in purchasing decisions.

10. Inclusive innovation
Companies are expected to demonstrate their ability to meet a diverse range of dietary, cultural and societal needs.

Five fundamental shifts

Beyond these ten trends, the report highlights five key drivers: the rise of personalised health, the search for richer food experiences, the individualisation of offerings, the quest for a better balance between value and accessibility, and innovation driven by digital technology, inclusivity and pragmatic sustainability.

“These insights show that the food of tomorrow will be more personalised, more closely aligned with individual expectations and more focused on creating value. Understanding these developments is essential for companies wishing to anticipate the markets of tomorrow,” emphasises the SIAL Insights team.

Industry professionals will be able to explore these trends at SIAL Paris 2026, which will bring together more than 8,500 exhibitors and stakeholders from over 200 countries to jointly analyse the future of food.

The San Francisco Peninsula Spotlights Heritage Fire as Part of Multi-Year Culinary Initiative Celebrating the Region’s Global Food Culture

The San Francisco Peninsula continues to build momentum around its recently launched multi-year culinary initiative with the addition of Heritage Fire San Mateo, a signature live-fire culinary experience that will take place Sunday, July 26 at Coyote Point Recreation Area.

Part of the global Heritage Fire & Whiskies of the World Tour, the event underscores the Peninsula’s growing reputation as one of California’s most vibrant and diverse dining destinations. By bringing together leading local chefs, farmers, ranchers and culinary artisans for an immersive open-flame cooking experience, Heritage Fire reflects the core pillars of the initiative – celebrating regional ingredients, elevating culinary talent and showcasing the Peninsula’s rich multicultural influences.

“The San Francisco Peninsula’s culinary identity is defined by its diversity of flavors, strong agricultural roots and extraordinary talent,” said Maggie Lang, Chief Sales & Marketing Officer for The San Francisco Peninsula. “As we invest in a multi-year effort to tell our destination’s food story, Heritage Fire is a natural fit as it brings our culinary community together in a way that is authentic, experiential and deeply connected to this region.”

Home to more than 50 working farms and fisheries, over 25 Michelin-recognized restaurants and a tapestry of more than 80 global cuisines, the Peninsula offers a uniquely immersive food experience, one that spans from coastal fishing docks and farmland to cutting-edge kitchens.

Heritage Fire San Mateo will showcase this diversity through a walk-around tasting format, where guests can engage directly with chefs as they prepare dishes over live flame. Attendees will enjoy unlimited tastings of fire-cooked cuisine alongside curated selections of whiskey, bourbon, wine, beer and craft cocktails in a vibrant outdoor setting.

As part of the experience, guests will vote on their favorite dish, with the winning chef earning the title of “Heritage Hero” and the opportunity to advance to the tour’s Grand Finale.

“Events like Heritage Fire help bring our culinary initiative to life by creating meaningful connections between visitors, chefs and locals,” Lang added. “It’s an opportunity to experience the Peninsula’s food culture not just by tasting it, but by understanding the people and traditions behind it.”

The inclusion of Heritage Fire within the Peninsula’s culinary programming reflects a broader strategy to elevate food tourism and position the region as a must-visit destination for culinary travel. Through partnerships with nationally recognized events and local innovators, the initiative aims to amplify storytelling around sustainability, seasonality and cultural diversity in dining.

“Coyote Point has long been one of San Mateo County's most treasured outdoor spaces, with its sweeping bayside views and natural beauty making it the perfect backdrop for an event that celebrates community and connection," said Nick Calderon, Deputy County Executive and former County Parks Director of San Mateo County. "Hosting Heritage Fire here reflects exactly the spirit our parks were designed for - bringing people together to enjoy this incredible setting while celebrating the food, culture and traditions that make The Peninsula so special.”

Produced by a21, Heritage Fire spans multiple cities across the U.S. and Europe, with each location designed to reflect the unique culinary identity of its host destination.

The addition brings an exciting new dimension to a lineup that blends beloved Festival traditions with bold new culinary experiences, further cementing the Seaport and the Invesco QQQ Festival Campus as the home of New York City's premier celebration of wine and food.

“Each year, NYCWFF gives us an opportunity to celebrate the incredible chefs, restaurants, beverage partners and culinary talent that make New York one of the greatest cities in the world,” said Lee Brian Schrager, Festival Founder and Chief Communications Officer and SVP of Corporate Social Responsibility for Southern Glazer's Wine & Spirits. “As we return to the Seaport for our 19th year, we're excited to continue building on the momentum of our new home while expanding the Festival experience with the addition of The Rooftop at Pier 17. #CulinaryCourant #SouthernPeachy Big Green Egg's EGGtoberfest Returns October 3 -- Tickets on Sale Now

The South's most delicious fall tradition is back with 200+ Big Green Eggs. One epic day. Zero excuses.

Big Green Egg is bringing its annual EGGtoberfest back to the Atlanta area on Saturday, Oct. 3, 2026. The one-day live-fire cooking celebration will gather Big Green Egg fans, backyard cooks, families and food lovers at Gwinnett Field in Lawrenceville, Georgia, for one of the most distinctive food events this fall.

The 29th annual EGGtoberfest is unlike any other food festival: a gathering where the Big Green Egg community comes alive over fire, food and a shared passion for outdoor cooking.

This year's event will feature:More than 300 Big Green Eggs cooking everything from brisket to brownies
Unlimited tastings from cook teams, celebrity chefs, Atlanta restaurants and EGGfest Champions from across the country
Live cooking demos, exclusive Big Green Egg product showcases, special event deals, music, merchandise and family-friendly experiences
Around 4,500 guests expected for one of Big Green Egg's largest live-fire community gatherings of the year

"EGGtoberfest is one of those rare days where you show up as strangers and leave as friends," said Dan Gertsacov, CEO of Big Green Egg. "Twenty-nine years in, this connection is more important now than ever. There's something that happens when people gather around live fire, share what they love to cook, and welcome others into that experience. That's the spirit of Big Green Egg, and it's what keeps bringing people back every October."

In a year when screens compete for every meal and every moment, EGGtoberfest is the answer: four hours, live fire, no algorithm. Just cooks, food and the people who show up to eat it.

EGGtoberfest originated in 1998 as a way for Big Green Egg to thank its loyal customers and give early Forum users – those who are part of an online community sharing tips and EGGspert advice – a place to gather, cook and share their favorite recipes on the EGG. What began with roughly 100 Big Green Egg pioneers and 15 cooks has grown into the largest EGGhead gathering in the world, bringing thousands of new and experienced cooks together each fall.

For guests, the experience is part food festival, part cookout, part live-fire masterclass and part reunion, with EGG professionals, chefs and passionate backyard cooks sharing recipes, techniques and sample-sized bites throughout the day.

EGGtoberfest 2026 is held in partnership with Giving Kitchen, a nonprofit that provides emergency assistance to food service workers through financial support and a network of community resources. Giving Kitchen's goal is to create a food service community in which crises are met with compassion and care.

#CulinaryCourant #Politics #HealthyPeachy #MAHA @WhiteHouse @SecKennedy @realDonaldTrump @Potus President Trump Signs Executive Order Advancing Regenerative Agriculture as Part of Make America Healthy Again Agenda

President Donald J. Trump today signed the Executive Order, Advancing Regenerative Agriculture and Strengthening American Farm Resilience, reinforcing the Administration's commitment to partnering with American farmers to build the healthiest, most abundant, and most affordable food supply in the world. U.S. Department of Health and Human Services (HHS) Secretary Robert F. Kennedy, Jr. and U.S. Department of Agriculture (USDA) Secretary Brooke Rollins joined President Trump in the Oval Office alongside four of the nation's leading regenerative farmers to discuss how regenerative agriculture can improve soil health, enhance farm resilience, increase profitability, strengthen rural prosperity, and help Make America Healthy Again.

"Making America Healthy Again begins with understanding that health starts long before someone enters a doctor's office,” said HHS Secretary Robert F. Kennedy, Jr. “It starts with the food we eat and the way it is produced. Today’s Executive Order reflects President Trump’s commitment to working alongside America’s farmers to strengthen our food system while advancing research that will deepen our understanding of how agricultural practices, nutrition, environmental exposures, and human health are connected. America cannot Make America Healthy Again without America’s farmers."

The Executive Order directs HHS, USDA, and the Environmental Protection Agency (EPA) to strengthen research, innovation, and public-private partnerships that support regenerative agriculture while advancing the Make America Healthy Again agenda. Under the Order, HHS, USDA, and EPA will develop a research and evaluation framework to improve understanding of cumulative chemical exposures in the food supply using new scientific approaches. HHS will also launch a National Institutes of Health Grand Prize Challenge to accelerate innovative methods for evaluating, diagnosing, and addressing cumulative chemical exposures and will direct the Advanced Research Projects Agency for Health (ARPA-H) to prioritize research into technologies that reduce reliance on chemical crop protection tools while improving human health.

This effort builds on the February announcement by HHS, USDA, and EPA of more than $1 billion in investments to modernize American agriculture and strengthen the long-term security of our food supply.

Coinciding with today's announcement, HHS released a new Assistant Secretary for Planning and Evaluation (ASPE) issue brief, Regenerative Agriculture and Population Health: Examining How Regenerative Agriculture Can Support Healthier Food Systems and Better Health Outcomes. The report reviews emerging evidence on the potential connections between regenerative agriculture, food quality, environmental exposures, and human health while highlighting opportunities for additional research. The issue brief concludes that regenerative agriculture represents a promising area for continued scientific evaluation and may complement broader federal efforts to improve nutrition, strengthen food systems, and address upstream factors associated with chronic disease prevention.

#CulinaryCourant These Are the Flavors at the Center of This Year’s Summer Celebrations and Gatherings, According to Food and Beverage Report

Flavor experts at California-based T. Hasegawa USA publish free summer report, highlighting savory and sweet flavors projected to be popular across menus and stores

Following the official first day of Summer, one of the world’s top food and beverage flavor manufacturers is helping consumers level up their barbecues and outdoor gatherings by highlighting the top 10 flavors of the summer – five sweet and five savory. This year’s flavors, inspired by global cuisines and national favorites, were chosen based on consumer trends.

With the United States celebrating its 250th anniversary as a nation and the FIFA World Cup taking place across North America, T. Hasegawa USA’s 2026 Summer Flavors celebrate the diverse foods and joy of coming together around shared moments.

The 2026 Summer Flavors are:

SweetFirework – A patriotic burst of cherry, lime, and blue raspberry that captures the excitement of summer festivities and is reminiscent of the United States’ red, white, and blue.
Prickly Pear – A vibrant cactus fruit native to the Americas, delivering berry-like sweetness with bold color across beverages, sauces, and confections.
Sweetcorn – A nostalgic, nutty-sweet favorite that brings carnival-style comfort to beverages and desserts. More than half of U.S. candy and dessert eaters have already tried a sweetcorn-flavored treat.
White Peach – A honeyed, delicate sweetness that shines in refreshing drinks, jams and grilled desserts -- perfectly ripe for summer. 46% of consumers have tried white peach in non-alcoholic beverages.
Blackberry – Rich, tangy, and versatile, blackberries' deep sweetness and bold hue make them a standout addition to both sweet and savory applications.

SavoryCharcoal – The essence of summer grilling, delivering a smoky, complex char that elevates meats, vegetables, and seafood. 77% of US consumers like to try new flavors while grilling, while 34% research ways to enhance food quality when grilling.
Guajillo – A staple of Mexican cuisine, this moderately spicy chili brings sweet heat to everything from savory dishes to desserts and chocolate. Nearly half of global consumers have sought intense, bold flavors.
Yakitori – Classic Japanese skewered chicken grilled over charcoal with a sweet soy-based glaze, offering simple, high-quality flavor ideal for gatherings.
Spicy Coconut – Tropical and fiery, this creamy chili-infused flavor draws inspiration from the culinary traditions of South Asia, Brazil and Jamaica.
White Miso – A mild, tangy Japanese seasoning paste made from fermented rice and soybeans that adds umami depth to dressings, marinades, and grilled dishes.

“With our nation’s 250th anniversary and the World Cup now in North America, global cuisine and regional pride will converge on our restaurant menus, grocery store shelves, and pantries like never before,” said Mark Webster, vice president of sales and marketing at T. Hasegawa USA. “As consumer preferences continue to evolve, food and beverage brands are uniquely positioned to have fun and leverage bold and nuanced flavors to capitalize on the excitement this summer brings.”

#CulinaryCourant #ItalyPeachy TUTTOFOOD 2026: RECORD-BREAKING FAIR WITH +30% ATTENDANCE With its second edition organized by Fiere di Parma, TUTTOFOOD consolidates its position as a dynamic hub for global exchange, further driving exports, revenue, and international business relations

-A note from the editor-

It's widely known that Peachy eats Italian more than any other cuisine

***
– TUTTOFOOD 2026 closed with record-breaking numbers, registering 123,000 attendees over four days, including 27,000 international visitors, representing a 30% increase compared to the 2025 edition. The participation of such a large number of professional operators—including industry, distribution, foodservice, importers, and buyers—demonstrates the fair’s ability, organized for the second year by Fiere di Parma, to convert global demand for high-quality food into commercial relationships, market access, and business development. At the same time, it confirms TUTTOFOOD’s growing role as a key international economic platform for the food & beverage sector.

This successful outcome stems from a strategic partnership between Fiere di Parma and Fiera Milano, with international support from Koelnmesse, organizer of the world’s largest food trade fair, Anuga in Cologne. TUTTOFOOD 2026 edition covered 10 pavilions, totalling 82,000 square meters of fully booked exhibition space (+15%), hosted 5.000 brands (+20%, approximately 30% of which from abroad), and welcomed 4,000 top international buyers.

Antonio Cellie, CEO of Fiere di Parma, said: “The figures and the unanimously positive feedback from exhibitors, buyers, visitors, and regular attendees of historic global food fairs confirm it: we have filled a space that was still unexpectedly open, creating a completely new international event for the agri-food sector. This event fully reflects Italian know-how in trade fair organization, offering a platform for exhibitors from around the world to connect with international markets, within a fully integrated business ecosystem".

“Today, trade fairs are no longer just product showcases” Cellie added “They are business hubs where companies assess international demand, develop markets, build commercial relationships, and turn opportunities into tangible economic results. The growth in attendance shows that companies and operators are seeking physical, qualified spaces to navigate a global market that is increasingly fragmented, selective, and competitive.”

Attendance growth is particularly significant given the current context of geopolitical tensions, tariffs, energy cost pressures, commodity volatility, and the restructuring of global supply chains.

Buyers from the USA, Latin America, Asia, the Gulf, and European countries such as France, recognize the high reputation of Made in Italy, thanks to the undeniable quality of raw materials, authenticity, production reliability, distinctive offerings, and the gastronomic and cultural value it carries. One European buyer highlighted that approximately 70% of their restaurant business revolves around Italian products, demonstrating that Italian cuisine has become a structural element of the international foodservice offering. Key Italian categories such as olive oil, balsamic vinegar, flour, pasta, biscuits, and chocolate are considered irreplaceable in many markets. For operators such as Cencosud (Latin America) and City Super Group (Hong Kong), Italy represents the main European sourcing market for food products.

An interesting aspect is that Italian food is perceived not only as classic or traditional but also as innovative, capable of experimenting and creating new culinary recipes, anticipating trends.

In terms of innovation, Ben Costantini from Sesamers, a French company that brought startups from seven countries to the fair, specialized in software platforms, functional beverages, artisan sauces, and processing machinery, said, “TUTTOFOOD is not just a place to sell today’s products; it is where the next generation of food innovators finds their market.”

At the close of TUTTOFOOD, Banco Alimentare Lombardia collected approximately 25 tons of food from over 600 companies that generously donated surplus products, distributing them to more than 1,000 local partner organizations (canteens, reception centers, family homes, etc.), benefiting over 200,000 people in need.

TOP BUYER PERSPECTIVE

SYSCO - With annual revenue of approximately USD 81–84 billion, 75,000 employees, a market cap of around USD 35 billion, over 730,000 customers, and more than 330 distribution centers worldwide, Sysco is the largest foodservice distributor in the USA, focusing on restaurants, hotels, hospitals, schools, and catering. It attends TUTTOFOOD for its international reach, critical for establishing direct relationships with producers and buyers. Rising prices in the USA do not curb demand for quality products. Tariffs and duties are considered secondary to supply chain security. Sustainability and traceability are increasingly central in response to growing concerns about global food supply. This evolving demand also drives growth for Italian food in the USA, leading Sysco to appoint Italian product specialists across its group companies. American consumers recognize and seek authentic Italian products, including premium options, with a broader range than traditional offerings: the market is no longer “ethnic” but mainstream.

CENCOSUD – One of the largest retail groups in Latin America, based in Santiago, Chile, with 50 years of history, operating in supermarkets, hypermarkets, shopping centers, DIY/home improvement, department stores, and financial services across Chile, Argentina, Brazil, Peru, Colombia, and the USA. Employing 100,000 people, with 1,500 stores, revenues of USD 17 billion, and EBITDA of about USD 1.5 billion.

They attend TUTTOFOOD to create international assortments for South American shelves. They bring back from the event “a piece of every European country”, with a strong focus on innovation. The stated objective is to be the first to bring to South America the innovations showcased in the fair’s Innovation areas, as Latin American consumers are described as increasingly curious, open to experimentation, and interested in recipes that combine ingredients from multiple countries. Italy confirms its role as a strategic European reference for food export, while sourcing from Germany, Portugal, France, the UK, Spain, as well as Thailand, Korea, and Australia, grows. Peru is the most dynamic Latin American market, while Argentina saw an exceptional +100% increase in European product imports in the past 12 months. Key message: despite slowing consumption, European—particularly Italian—food continues to be perceived as synonymous with quality, innovation, and distinctiveness.

SPINNEYS – A premium supermarket chain operating mainly in the United Arab Emirates, Oman, and Saudi Arabia, one of the leading high-end retailers in the Gulf, with a focus on quality, international assortments, and premium products. In 2025, it recorded revenues of around USD 1 billion, with a +13% year-on-year growth, serving over 100 million customers annually. Spinneys attends TUTTOFOOD to strengthen partnerships with producers—especially Italian—and further expand its premium offerings for the Gulf markets.

The buyer, attending TUTTOFOOD for the fourth time, describes the fair as “strategic and highly positive for business development.” Italy is recognized as a privileged partner for private label products (which show strong growth, up to +40% YoY) due to the recognized quality of Made in Italy and simpler logistics compared to other sourcing markets. The goal is to identify new business opportunities, expand existing ranges, and select new premium and artisanal producers for inclusion in assortments. The most dynamic categories include olive oil, preserved foods, legumes, flour, premium tuna, anchovies, organic products, and high-value Italian specialties. Spinneys is particularly interested in premium antipasti, olives, and pasta, which are increasingly relevant for Gulf high-end consumers, as well as organic and health-focused products. According to the buyer, organic products are one of the market’s strongest trends and could even double in value in the near future due to growing consumer attention to health, quality, and natural ingredients.

PROMOCASH, The Carrefour Group’s cash & carry unit, specialized in supplying professional foodservice operators. Approximately 95% of its business is tied to restaurants, and within this share, about 70% involves Italian products.

Promocash attends TUTTOFOOD to consolidate relationships with existing suppliers and identify new products and producers for its shelves, taking the opportunity to test and select new lines for the French market. Italy is described as an essential reference for French foodservice, especially in categories such as olive oil, rice, pasta, flour, and preserved vegetables. Their declared goal is to “bring authentic Italian style to France,” offering restaurateurs products that are genuine and not yet widely available locally. The fair is considered strategic because it allows buyers to compare numerous producers within the same product categories in one place, facilitating assessments of quality, assortment, and positioning. The exhibition’s completeness is also emphasized, representing almost the entire range of international food. A concrete example: for an Italian flour producer with whom Promocash has collaborated for three years and whose volumes continue to grow, a further +30% increase in purchases is expected in 2026. Compared to other international fairs like SIAL Paris, TUTTOFOOD is perceived as more accessible and functional for buyers, thanks to well-organized spaces for meetings and tastings, and a simple, efficient management of the fair experience.

COUPANG - One of the leading e-commerce players in Asia, often called “the Amazon of Korea,” founded in 2010 and today a leader in the South Korean market thanks to its ultra-fast “Rocket Delivery” logistics system. The group integrates marketplace, proprietary logistics, food delivery, streaming, and fintech, with annual sales exceeding USD 35 billion.

Coupang attends TUTTOFOOD to strengthen sourcing of authentic Italian products for the Korean market, with particular attention to premium lines and signature Made in Italy categories such as olive oil, spaghetti, and balsamic vinegar. Italian food is already very popular in South Korea and continues to grow year by year, especially among urban consumers increasingly focused on quality, authenticity, and international cuisine. Activities at the fair were intense, with about ten business meetings per day between existing suppliers and new companies to be added to the platform. B2B development is central: the goal is not only to understand which products could succeed in the Korean market but also to determine how Coupang can concretely support the companies present at TUTTOFOOD in commercial development and product distribution in Korea. The growth potential for Italian food in the South Korean market is still very high, with Coupang expecting a significant increase in purchase volumes following the fair.

CITY SUPER GROUP – Premium retail group founded in Hong Kong in 1996, specializing in gourmet supermarkets, imported international products, wine & spirits, and lifestyle retail through its main brand City’super. Considered a high-end benchmark for food shopping in Asia, the group operates in Hong Kong, Shanghai, Nanjing, and Taiwan, with a positioning focused on quality, international selection, and premium retail experience.

City Super Group attends TUTTOFOOD to consolidate and expand direct sourcing from Italy, now considered the group’s main supplier. The company imports without intermediaries and regards Made in Italy as a central element of its assortment strategy, particularly for premium categories targeting sophisticated Asian consumers attentive to product authenticity. The fair represents an important opportunity to meet established suppliers in person and discover new brands aligned with Hong Kong and Taiwan market demands. Strong interest is shown in family-run companies and highly specialized productions, seen as synonymous with quality and distinctiveness. Sought-after categories include dried fruit, condiments, extra virgin olive oil, balsamic vinegar, chocolate, and premium pistachio cream with high raw material content. Italian food continues to be perceived as a qualitative benchmark in the Asian gourmet segment, with City Super Group expecting at least a +10% increase in imported volumes from Italy following the fair. After attending numerous international events, TUTTOFOOD is described as the best for both the quality and quantity of exhibitors, as well as for the organization of business meeting spaces, judged spacious, clear, and efficient.

#CulinaryCourant #ItalyPeachy A TUTTOFOOD 2026 IL RUOLO DEL FOOD SERVICE COME DRIVER GLOBALE DEL MERCATO AGROALIMENTARE

For everyone that speaks Italian better than Peachy who can say her name and that she likes Italian shoes:

For everyone that speaks Italian better than Peachy who can say her name and that she likes Italian shoes:

[brand owners that speak English well should contact Peachy directly only at peachydeegan at gmail]
